You won’t believe how amazing this easy dumplings recipe turned out, and the best part is, they’re super fast to make! It all started with some leftover chopped veggies in my fridge from our Mexican fried taco dinner the other night. I had some cabbage, onion, and cilantro just waiting to be used up. I usually keep rice wrappers in my pantry for making cold spring rolls, but this time, I got a little spontaneous.
I remember a few days ago, I saw some pan-fried veggie dumplings that looked so mouthwatering. So, with those leftover veggies and my trusty rice wrappers in hand, I decided to give it a try. It turned out to be an amazing appetizer that was gone way too fast.
This dumplings recipe has become a real hit in my kitchen! My mom, my husband, and everyone who’s tried it absolutely loved it. It’s become one of those go-to dishes I can make when I’ve got friends or family dropping by, or even when I’m craving a tasty lunch all for myself. What makes it extra awesome is that you can use whatever veggies you happen to have on hand, making it super flexible and easy to customize. So, let me tell you more about this keeper of a recipe!

3 Cups of mixed vegetables, in this example I used:

- 1/3 Cup Onion, chopped
- 1/4 Cup Cilantro, chopped
- Garlic minced
Let’s make this easy dumplings recipe
Instructions:
- Chop and prepare all of your vegetable ingredients, for this recipe I cooked the edamame separately in the microwave.
- In a medium heat pan, pour the sesame oil, add vegetables with the exception of the already cooked edamame, add soy sauce and rice vinegar, and saute for about 5 minutes or until vegetables are tender, then set aside in a bowl.
- Prepare a shallow bowl with water to dip the rice wrappers, and a large plate to add dumplings.
- Dip a rice wrapper in the water bowl only in and out of each side, I like to dip three at a time because they soften very quickly.
- Add about a tablespoon of the vegetable mix in the middle of the rice wrapper, fold it in half, then again form a triangle, and finally fold the corners.
- Sprinkle some sesame seeds on the smooth side, place on the large plate, and repeat until you are done with your filling.
- In the medium heat pan, grease with oil of preference and cook dumplings for 2-3 minutes on each side, or until crisp and golden.
