We’re big fans of fall and winter – the cozy sweaters, crisp air, and all the good stuff that these seasons bring. So, naturally, we had to make a recipe featuring one of our favorite seasonal veggies. This comforting butternut squash pasta it’s super easy to prepare.
I can’t even begin to tell you how much I adore this dish. It’s become my go-to for those laid-back evenings when I want something hearty but not too heavy. The balance is just perfect – it fills you up without making you feel like you’ve got a brick in your stomach.
Ingredients:
(4-6 servings)
- 2 Cups Butternut squash cubes
- 300 grams Pasta (I used Fettuccine)
- 2 Cups Vegetable broth, low-sodium
- 1/2 Onion, yellow
- 1/2 Cup Mozzarella cheese, shredded
- 1/4 Cup Parmesan cheese, grated
- 1 Slice Cheddar cheese
- 2 Tablespoons Butter, unsalted
- Salt and Pepper to taste
Let’s make butternut squash pasta!
Instructions:
- Cook the pasta according to package directions, and set aside.
- Peel and cut butternut squash into cubes set aside the 2 cups, and save the rest for another recipe.
- In a boiling pot with about 2 cups of water, add vegetable broth and butternut squash cubes and boil until fork tender.
- Chopped the onion in slices and in a medium heat pan, saute with 1 tablespoon of butter.
- Once the butternut squash is cooked, before draining the water, set aside about half a cup of the broth water in case you want to thin the pasta sauce.
- In a blender, mix butternut squash cubes, cheese, onion, salt and pepper.
- In a medium heat pan, add the sauce and let it bubble a little, add the pasta to incorporate with the sauce.
- Serve with your favorite spices, such as crushed peppers, parsley, and more parmesan cheese.
What really caught me off guard was how much my kids loved it too! This butternut squash pasta is a real winner for the entire family, whether you’re making it for a hearty lunch or a cozy dinner. It’s one of those recipes that are easy and just brings everyone to the table.
I’m really looking forward to experimenting with more recipes featuring seasonal vegetables. My butternut squash turned out to be quite big, so I set aside some for future recipes.
