Preheat the oven to 350°F / 200°C and cover a baking sheet with parchment paper. Initially, I used two sheets, thinking the cookies might spread. However, since oats are the main ingredient, it turns out one large baking sheet would have been enough.
Step 2.
In a large bowl, mix dry ingredients, flour, oats, baking soda, baking powder, and salt, and set aside.
Step 3.
In your mixing bowl or medium-large bowl, combine the mashed banana, sugars, butter, and vanilla extract and mix very well until smooth, then mix the egg.
Step 4.
Gradually add dry ingredients to the wet ingredients, and mix on low until incorporated, but don’t over-mix. Then, Incorporate the chocolate chips into the batter, ensuring thorough and even distribution.

My oven tends to heat too quickly so I actually took mine out at the 9 minutes because I was afraid they would turn too dark on the bottom, so if your oven is similar watch, check at the 8 minutes to see how they’re doing.
Step 6.
Let cookies cool for at least 10 minutes and enjoy warm or cool. I love these chocolate chip oatmeal cookies when they are warm.
