- 1.5 Cup Oats
- 1 Cup Almond milk
- 2 “Vegan eggs” (2 tbsp of flaxseed ground with 6 tbsp of water, each “egg” is 1tbsp of flaxseed ground and 3 tbsp of water)
- 1/3 Cup Butter melted or coconut oil (I use vegan butter)
- 1/2 Cup Brown sugar
- 1 Cup Flour (I use half All-purpose and half Wheat flour)
- 1 tsp Baking powder
- 1/2 tsp Baking soda
- 1/2 tsp Salt
- 3/4 tsp Cinnamon ground
- 1/2 Cup Chocolate chips and more to add on top (I use Vegan chocolate chips)

- In your mixing bowl add the milk and oats and let it sit for ten minutes.
- Also, let the flaxseed ground and water sit for five to ten minutes, to create the Vegan eggs.
- Preheat oven to 420F and line a 12-cup muffin pan with paper liners.
- Mix your dry ingredients except for the sugar.
- Add the wet ingredients and sugar to the oats and milk and start mixing.
- While mixing add the dry ingredients.
- Fold (add) the chocolate chips.
- Divide the batter among the paper liners, and add a few chocolate chips on top of each muffin.
- Bake for 6 minutes, then reduce heat to 350F and continue baking for 13-16 minutes.
- Transfer to a cooling rack and let cool or serve a bit warm.
