I’m not kidding, but I almost ate the entire batch of the six pop tarts homemade by myself. It’s kind of surprising how tasty they are, and you can make them vegan too. Seriously, you should definitely give them a shot – they’re super yummy!
Just so you know, the ingredients might look like a bunch at first, but making this is surprisingly easy. While the dough chills, you can whip up the applesauce, and while they’re baking, you can quickly make the frosting. So, this homemade pop tart recipe goes really smoothly, and the end result is totally worth it.
Ingredients:
Dough Ingredients:
- 2.5 Cups All-purpose flour
- 1 Cup Butter, unsalted
- 1 TBS Sugar, granulated
- 1 Tsp Salt
- 3-4 TBS Iced water
Apple Filling Ingredients:
- 2-3 Apples
- 1/2 Cup Brown sugar
- 1 TBSP Flour, all-purpose
- 1 Tsp Cinnamon Powder
- 1 Tsp Vanilla extract
- 2-4 TBSP Water
Frosting Ingredients:
- 1/2 Cup Cream cheese
- 1 TBSP Almond milk (or preferred milk)
- 1/4 Powder sugar
- 1 Tsp Vanilla extract
- 1/2 Tsp Cinnamon powder and more to sprinkle
- 1/4 Tsp Salt
Instructions:
Step 1.
I like to cut the butter into smaller pieces, about one tablespoon pieces, this way it is easier for the dough to be well incorporated with the butter. Then with a fine mesh strainer, sift the flour and the sugar, this part is optional, but worth it when it comes to avoiding crumbs. When the dough has formed into a ball, put it in the fridge wrapped in plastic for about half an hour, or while you are preparing the apple filling and frosting.
Step 2.
Chop the apples into small squares and cook them with the remaining filling ingredients, which are the water, flour, sugar, vanilla extract, and cinnamon powder. Stir occasionally for about 10-15 minutes, then let it cool while you prepare the frosting.
Step 3.
Mix the frosting ingredients until smooth, I have to confess that I tried doing this with a fork and I ended up doing it with my electric mixer so it will be super smooth, but of course, this can be done with a fork with more patience, haha.
Step 4.
When the apple mixture is cooled, add it to the food processor or blender, and pure until smooth. Some people like to leave some of the crunks of the apples in the pure, but this time I blended it very smoothly.
Step 5.
Preheat the oven to 350°F (200°C). Take the dough from the fridge and roll it to form a big rectangle, I had to use my hands to form the rectangle shape better. Cut it into 12 smaller rectangles, and also, use your hand to form the small rectangles from the edges better.
Step 6.
Now, it’s time to add the filling, by adding about two tablespoons on six of the rectangles, but leaving room in the edges so it doesn’t spill while baking.
Step 7.
Cover the six rectangles with the remaining six, and with a small fork, press around the edges and gently pierce the pop tarts on top.
Step 8.
Brush the pop tarts with almond milk or your preferred milk, then bake them for about 20-24 minutes. I left mine a little bit longer because my oven is very unpredictable, but after 20 minutes, make sure to check on them and see if you would like them a bit toastier on the edges.
Step 9.
Let the pop tarts cool for at least 15 minutes, then spread the frosting you made, sprinkle a little more cinnamon powder, and enjoy!
