· 1.5 Cups Mashed purple potatoes (approximately)
· 1/2 Cup All purpose flour (or preferred flour)
· 1 TBSP Olive oil
· 1 Tsp Salt

1. Mash the potatoes well and put them in a mixing bowl.
2. Sift and add flour, then include salt and olive oil.
3. Knead until you get a dough, sprinkle some flour to prevent sticking (if too sticky, add more flour; if too dry, add a little water, about a teaspoon at a time, until it’s easy to handle).
4. Split the dough into 6 equal parts and shape them into balls.
5. Roll the balls into tortillas using a rolling pin or shape them by hand (use parchment paper to prevent sticking to the rolling pin).
6. On a medium-heat, lightly greased pan, cook the tortillas for about 1 minute on each side.
7. Enjoy with your favorite fillings!

3 Bunches Asparagus 
2 Lemons (Save a few slices to garnish)
1/4 Cup Parmsean cheese
2 TBSP Olive oil approximately 
Salt to taste
Pepper to taste

Instructions: 

1. Heat the oven to 425°F and make sure to wash the asparagus well.
2. Trim about 1.5 inches off the ends of the asparagus and throw them away.
3. Optionally, cut the asparagus into thirds.
4. Put the asparagus in a bowl with a lid, add salt, pepper, olive oil, and parmesan cheese. Close the lid and shake to mix everything together.
5. Spread the asparagus on a baking sheet lined with parchment paper and bake for 10-12 minutes.
6. If you want, sprinkle more Parmesan cheese, add lemon slices, and bake for an additional 4-5 minutes.
7. Serve as a side dish and enjoy!

	•	1 Tuna steak, fresh
	•	1 Lime, juiced
	•	1 TBS Soy sauce
	•	1 Tsp Sesame oil
	•	Salt and pepper to taste

Toppings:
	•	Sriracha mayo
	•	Avocado slices
	•	Cucumber slices
	•	Rice
	•	Everyhing bagel seasoning with seaweed crumbles

Instructions:
1. In a bowl, marinate the tuna with lime juice, soy sauce, sesame oil, salt and pepper on both sides.
2. Grill tuna on a medium-high heat greased pan, for about 3 minutes on each side or longer if you want it throughly cooked, then cut in slices.
3. Make one cut on half of the seaweed sheets and only halfway.
4. Add the tuna slices with srichacha mayo on one of the four sides. Then repeat with the rest of the ingredients on each side.
5. Fold the sides until you get a square and enjoy with more soy sauce, hot sauce or as a sandwich.🥪

Sliced almonds for sprinkling

Instructions:

1. Pre-heat oven at 350 F degrees (200 C)
2. In a large bowl mix chicken, peas, carrots, sour cream, corn, scallions, salt, garlic powder, and pepper.
3. In a large baking pan, spread the two dough sheets, and with scissors or kinfe cut strips, leaving a big rectangle in the middle.
4. Add the chicken mix in the middle, and fold the strips on the sides crossing them over.
5. Brush with the egg and bake for about 20-25 minutes or until golden brown.
6. Sprinkle almond slices and decorate with rosemary leaves.
7. Enjoy warm!

For a small one: (Double for bigger group)

• Half 8oz pack of Brie cheese in small rectangles
• Crescent roll dough pack
• Fig jam
• Walnuts
• Honey for top
• Fresh raspberries
• Rosemary for decor 

1. Preheat oven at 375 F degrees (200 C)
2. Prepare a pizza pan or large pan to fit the wreath, and a bowl to form the inside circle of the wreath 
3. Place the dough triangles around the bowl
4. Add the fig jam around the big part of the dough circle
5. Add Brie squares, (I added to many, don’t make my mistake), then walnuts, and fold the dough triangles, folding the tip to the bottom so they don’t unfold when baking.
6. Carefully remove bowl, I used a small knife to support the wreath while removing the bowl. 
7. Brush milk or egg wash and bake for about 15 minutes or until golden brown 
8. Sprinkle some honey, add raspberries, and rosemary for decor.

Ingredients for salmon ceviche recipe

This ingredient list is for about 2-4 people but we always end up making double de amount for parties and we take it as an appetizer.

  • 2lb – 2.5lb Fresh Salmon, I buy fresh Atlantic salmon from Cosco, but you can buy sushi-quality.
  • Salt to taste on every layer (see instructions)
  • 8-10 Lemons or/and limes
  • 2 Bunches of cilantro
  • 2 Cups of chopped onion
  • 3 Jalapeños chopped (or 2 depending on how spicy you like it)
  • 1/2 Half cup of soy sauce
  • Tostadas

Let’s make the salmon ceviche recipe!


To prepare the salmon, I prefer to slice it into semi-thin squares. As I meticulously cut each piece, I take extra care by double-washing the salmon, ensuring its pristine freshness. With the first layer of salmon delicately arranged in a casserole dish.

I drizzle the juice of approximately two limes or lemons onto each layer of salmon, allowing the tangy citrus essence to permeate every morsel.
