Ingredients:
- 2lb Shrimp of your choice, fresh
- 1lb Nopales (prickly pear cactus)
- 1 Onion, sliced
Red Sauce Ingredients:
- 4-5 Tomatoes (Roma or Plum)
- 1 Cup Cherry tomatoes
- 1/4 Onion, large white
- 2 California chiles, dry
- 2-3 Chiles de arbol, dry (tree chili)
- 1 Garlic clove
- 1 TBS Chicken bouillon powder
- Salt to taste
Cleaning The Nopales
Dealing with nopales can be a bit intimidating because some folks aren’t sure how to cut or clean them. But it’s simpler than it seems. We just trim off the spiky parts, peel them, chop them if necessary, wash them, then, boil them with a bit of salt and a piece of onion, and then give them a thorough wash with plenty of water.
Once we make sure to wash off the slimy liquid that nopales release, we grill them at a medium-high temperature. This gives them a nice crispness without being overly cooked and soggy.
Instructions:
- In a boiling medium to a large pot, add the red sauce ingredients except for the chicken bouillon and salt and pepper. So, tomatoes, peppers, onion, and garlic clove, and boil until tomatoes are cooked and easy to peel.
- In the meantime, in a separate small boiling pot, cook the nopales with salt and a piece of onion for about 5-7 minutes.
- In a separate medium pan/pot, grill sliced onion, and while onions are grilling, wash the cooked nopales generously with water.
- Once nopales are washed and all water is drained, add them to the grilling onions and grill them until nicely crisp.
- Blend the red sauce ingredients with the chicken bouillon powder, then add the sauce to the grilling onions and nopales, you can sift the sauce if you want a lighter sauce.
- Adjust the flavor with salt and pepper, then let it simmer for a few minutes.
- Add the fresh and washed shrimp to the boiling sauce mix pot, and only cook for three to four minutes.
- Serve with fresh avocado, rice, or even tortillas, and enjoy.
We decided to pair them with slices of avocado for a lighter lunch, keeping things on the healthier side. However, it’s worth noting that these spicy shrimp recipes would taste fantastic if served with warm tortillas or a bed of rice.
