While searching for Easter food ideas, I found these stuffed crescent roll carrots from the Pillsbury brand. I thought it’d be cool to make my own spinach dip version using my favorite dry vegetable mix for spinach dip.
Ingredients:
- 1 Pack Crescent dough sheet, (8oz)
- 1 Box Frozen spinach, chopped, cooked, cooled, and squeezed dry (10 oz)
- 1 Cup Artichoke, drained and chopped into small pieces.
- 1 Cup Chesnuts, water sliced, (8oz can)
- 1 Pack Dry vegetable recipe mix pack.
- 1/2 Cup Sour cream
- 1/2 Cup Mayonnaise
- 1 Jalapeño Chopped in very small pieces (optional)
- Aluminum foil, about 8 12×5 inch pieces
- Cilantro springs for decor, about 8-16.
Instructions:
Step 1.
Make sure the chopped spinach is squeezed dried as much as possible, I used a strainer and pad it with a lot of paper towels to make sure it’s pretty dry, otherwise, the spinach dip might be too watery. Then, mix the spinach, artichoke, vegetable mix pack, sour cream, and mayonnaise in a big bowl. Chill in the fridge for at least 2 hours.
Step 2.
Preheat oven to 400 F degrees and prepare a baking sheet, either greased or with parchment paper.
Step 3.
When it comes to forming the cones with aluminum foil to shape the dough when baking, I have to say I think should have used less aluminum foil and made the cones a bit more “airy”, if that makes sense, because they were too hard to come out without destroying the crescent rolls. Just a tip, but anyway, you should form eight cone shapes with the aluminum foil pieces.
Step 4.
Get the dough out of the pack and lay it on parchment paper or any surface with sprinkled flour so it doesn’t stick, then with a knife or pizza roller, cut eight 1-inch strips from the dough sheet. Wrap each strip around the aluminum cone to make the carrot shapes.
Step 5.
Bake the dough with the aluminum foil cones for about 8-10 minutes or until golden brown. Then wait for at least 10 minutes so the rolls cool down before removing the aluminum foil cones. Then fill the cavity with the spinach dip, either with a spoon or a baking pipe.
If you are having trouble removing the aluminum foil cones as I did, try making a straight cut on the back and carefully removing the aluminum foil cones, like in the image below.
Step 6.
Top with one or two sprigs of cilantro or parsley for a carrot top and serve this adorable appetizer at your Easter celebration.
