Ingredients:
(Serves 4-6)
- 2-3 pounds of extra lean ground turkey
- 5-6 zucchini, spiralized into noodles
- 8-10 ripe tomatoes, peeled and chopped
- 1 onion, finely chopped
- 1/3 cup of fresh basil, finely chopped
- 1 cup of tomato sauce
- Chopped jalapeño (to your taste)
- 2 garlic cloves, minced
- 1 tablespoon of chicken bouillon powder
- 1 tablespoon of oregano
- 1 teaspoon of salt (plus more to taste)
- 1 teaspoon of pepper (plus more to taste)
- Parmesan cheese (optional)
Let’s make zucchini spaghetti!
Instructions:
- In a medium to large pot, heat some olive oil over medium heat. Add the ground turkey and season it with salt and pepper to your liking.
- Cook the ground turkey until it’s browned and fully cooked. Once done, set it aside in a separate bowl. In the same pot, add the minced garlic and chopped onions and sauté them for about a minute or until they become fragrant.
- Add the peeled and chopped tomatoes, followed by the basil, oregano, jalapeños (adjust the amount to your desired heat level), and chicken bouillon powder to the pot.

- Once the ingredients in the pot start bubbling, you can either use an immersion blender to blend them directly in the pot or transfer them to a blender and then return the mixture to the pot.
- Add the cooked ground turkey back into the pot and gently mix everything together. Taste and adjust the seasoning with more salt and pepper if needed. Let it simmer for a few more minutes to allow the flavors to meld.
- When you’re ready to serve, heat a separate pan over medium heat. Add a touch of butter and then the zucchini noodles. Season the noodles with salt and pepper to taste, and sauté them for no more than two minutes until they’re just tender.
- Serve the zucchini noodles on a plate and top them with one or two generous scoops of your ground turkey sauce.
- Garnish your dish with Parmesan cheese or fresh basil, if desired.
