This is one of our asparagus recipes that is super easy to make, and the lemon juice and Parmesan cheese give it just the right amount of tasty goodness. It’s a breeze to put together but looks really nice when you top it off with some lemon slices.
When I need a quick side dish for a gathering, this green option always comes to mind. I can throw it together in less than half an hour before we head out.
Ingredients:
- 3 Bunch Asparagus, fresh
- 2 Lemons (Save about 3 thin slices to garnish)
- 1/4 Cup Parmesan cheese, and more to sprinkle
- 2 TBSP Olive oil
- Salt to taste
- Pepper to taste
Step 1.
Preheat the oven to 425°F and wash the asparagus properly. I love that asparagus cook so quickly, and baking them in a high temperature it’s key to get this side dish done quickly and crispy.
Step 2.
Trim about 1.5 inches off the ends of the asparagus and throw them away. I like to be generous when cutting the ends because, to be honest, who likes to eat hard unchewable asparagus?
Step 3. (OPTIONAL)
For this recipe, I cut the asparagus into thirds, because of the baking I was using, I didn’t want to carry a big tray so this step is totally optional.
Step 4.
Put the asparagus in a bowl with a lid, or if you don’t have a lid, can use a plate larger than the bowl so the asparagus doesn’t come out. Add salt, pepper, olive oil, and parmesan cheese. Close the lid and shake to mix all of the ingredients.
Step 5.
Spread the asparagus on a baking sheet lined with parchment paper or greased, then bake for about 10-12 minutes.
Step 5. (optional)
Transfer the asparagus to the initial baking bowl, sprinkle more Parmesan cheese, add lemon slices to garnish, and bake for an additional 4-5 minutes. For this step, I wanted the top to look nice and crispy.
